A 4th of July Wedding Celebration

What a way to celebrate such a holiday of independence than becoming husband and wife. Here are some ideas to help make you day memorable:

Plan your wedding colors around the tradition red, white and blue with plenty of white lights, paper lanterns, beautiful decorations and even add in some yellow for that good ole’ summertime feeling. Think about setting up your reception under a white tent that is patriotically decorated.

Rather than a sit down meal, consider having a old fashioned barbecue of corn on the cob, grilled meats, fruits, ice-cream, and other holiday fare foods such as a lobster bake.

For the non-traditional wedding, try cupcakes, strawberry shortcake, or even caramel apples for dessert instead of the traditional wedding cake.

Have a signature red and blue cocktail, beer, old fashioned root-beer floats, lemonade, tea, and unique soda pops served in wood crates or metal buckets of ice.

Instead of traditional serving dishes, think about using different service settings of antique ware depending on your theme (i.e. patriotic, homey barbecue, rustic retreat, beach, etc.).

For your favors, the book, “I Like You” buy Sandol Stoddard Warburg retails at approximately $6-$7 per book. Another option could be a printed card of the following verse from the book with a pack of sparklers.

It’s that time of year when the Summer season has arrived. Be at a hotel, a vacation rental, an all-inclusive, a cruise, foreign country traveling, camping or even a weekend getaway to the neighboring town; these are the times that we create memories; where we are rejuvenated, awakened, and smile in the sunshine simply because life is good.

As we all know, I am through-and-through a toes in the sand kind of girl. I love to listen to the ocean waves, hear the gulls, the laughter around me, some great music and to feel the warmth of the summer sun on my skin.

Where to go? Where to go? With so many options, I decided why not go where summertime is reminiscent of a carefree childhood vacation complete with the aroma of funnel cakes and the feel of the salty air while walking along the boardwalk. Where else but Wildwood Crest, New Jersey.

Should I get bored, I can always fall back to one of my favorites … shopping. Shopping is abundant in the Wildwoods from the Holly Beach Mall to the New Jersey Avenue merchants... the choices are endless. The summer air is filled with oldies music at the dockside, rock and roll at the clubs and ethnic sing-a-longs all over town. During the summer season, an estimated 2 million visitors come to the Wildwoods. Of course, the kids go crazy for the non-stop action on Morey's Piers – three incredible piers offering seven world-class roller coasters, two huge beachfront waterparks and family rides galore.

Am I in bliss? Most definitely. I came with an appetite for a mixture of childhood carnival food, cuisine, and of course, ice-cream before dinner. Summertime doesn’t get much better than this and the memories are priceless!

Your Place In The Sun

Catching up with the sun on Summer Solstice for a bit of sun worshipping at the Summer Solstice Festival and Parade at Santa Barbara, CA, the “American Riviera”, with colorful floats, dances and a drum circle you can participate in. Solstice Celebration

Welcome Summer ~ the Summer Solstice is June 21st where Sol + stice derives from a combination of Latin words meaning "sun" + "to stand still." As the days lengthen, the sun rises higher and higher until it seems to stand still in the sky.

As a major celestial event, the Summer Solstice results in the longest day and the shortest night of the year. The Northern Hemisphere celebrates in June, but the people on the Southern half of the earth have their longest summer day in December.

Celebrate the longest day of the year with the freshest summer foods and the whimsy of warm-weather decorating. When the sun lingers in the sky well into the evening, it’s the perfect opportunity to throw an outdoor party. Indulge in a few frozen fruity drinks, some chilled appetizers to keep things cool and decorate with bright, festive colors that match the intensity of the climate. Enjoy the sunshine, your friends and celebrate the beginning of summer.

The Drinks

Peach Fuzzies

1 (12-ounce) can frozen pink lemonade concentrate, slightly thawed and divided

3/4 cup vodka, divided

3/4 cup water, divided

4 cups peeled and cubed fresh, ripe peaches (about 6 large), divided

Crushed ice

Process half quantities of first 4 ingredients in a blender until smooth, stopping to scrape down sides. Fill blender with ice to 5-cup level, and process until smooth. Pour into a pitcher. Repeat procedure with remaining ingredients. Garnish, if desired

Makes 10 cups (from Coastal Living)

Cosmopolitan Slushy

10 ounce (1 1/4 cups) citrus-flavored vodka

1/2 cup Rose's lime juice

2 cups cranberry juice

4 ice cube trays

Combine vodka, lime juice, and cranberry juice in a pitcher with 2 cups water and stir to blend. Divide between ice cube trays and freeze at least 4 hours or overnight (the drink cubes will freeze only partially). Just before serving, empty trays into a large bowl and using a fork, break up cubes to loosen ice crystals (the ice will be slushlike). Spoon slush into tall stemmed glasses and serve immediately. Makes 6 servings (from Real Simple)

Watermelon Margaritas

Lime juice

Sugar

1/3 cup tequila

2 cups crushed ice

2 cups seeded, chopped watermelon

1/4 cup sugar

1/4 cup lime juice (about 1 1/2 limes)

1 tablespoon vodka

1 tablespoon orange liqueur

Coat rims of cocktail glasses with lime juice; dip in sugar. Process next 7 ingredients in a blender until slushy. Pour into prepared glasses. NOTE: To make ahead, place mixture into a large heavy-duty zip-top plastic bag; freeze up to 1 month. Let stand about 30 minutes before serving. Makes 5 cups (from Southern Living)

Also remember, good old fashion lemonade and ice-tea, along with many options for non-alcoholic drinks.

The Food

Fruit Kabobs

4 cantaloupe chunks

4 honeydew melon chunks

4 watermelon chunks

2 tablespoons orange juice

2 teaspoons chopped fresh mint

Thread 2 cantaloupe, 2 honeydew, and 2 watermelon chunks alternately onto each of 2 (10-inch) skewers. Place in a shallow airtight container; drizzle juice over kebabs, and sprinkle with mint. Cover and chill. Makes 2 servings (from Cooking Light)

Citrus-Cream Cheese Dip

1 (8-ounce) package cream cheese, softened

2 cups powdered sugar

2 teaspoons vanilla extract

1 tablespoon grated lime, lemon, or orange rind

1 cup whipped cream

Beat cream cheese, powdered sugar, and vanilla at medium speed with an electric mixer, stir in citrus rind. Fold in whipped cream. Makes 3 cups (from Southern Living)

Chilled Salmon Appetizers

12 slices party pumpernickel bread

Sauce Remoulade*

1 (4-ounce) package hot smoked salmon

Chopped fresh chives

Slice bread in half diagonally. Spread about 1 teaspoon sauce on bread, and top with small chunk of salmon. Sprinkle with chives. Makes 2 dozen

*Sauce Remoulade

1/2 cup mayonnaise

1 garlic clove, minced

1 teaspoon fresh tarragon, finely chopped

1/2 teaspoon dry mustard

1 tablespoon capers

1 egg, hard-cooked and finely chopped

1 teaspoon chopped fresh parsley

Combine all ingredients; mix thoroughly. Chill sauce 2 to 3 hours before serving. Makes 1 cup. (from Coastal Living)

Goat Cheese Truffles

4 ounces cream cheese, softened

1 (4-oz.) container crumbled goat cheese

1/2 teaspoon Worcestershire sauce

2 teaspoons finely chopped onion

1/4 teaspoon black pepper

1/2 cup toasted, chopped pecans

Dried figs

Dried apricots

Beat first 5 ingredients at medium speed with an electric mixer until well combined. Cover tightly, and chill at least 1 hour or until firm (can chill up to 3 days).

Roll cheese mixture into 3/4-inch-round balls. Roll each ball in pecans. Serve immediately, or cover and chill until ready to serve. If chilled, let stand 30 minutes before serving. Serve with dried figs and apricots. Makes 6 appetizer servings.  (from Southern Living)

The Details

For favor gifts give a bottle of sunscreen, a fun pair of sunglasses, flip-flops, or a summertime themed cookie in a cellophane bag tied with ribbons of orange, yellow and green. You could also give small votive candles with the same theme or even floral scented bottles of lotions.

Friday Fun and Father's Day Weekend is Here

As I type the words I am wondering where May has gone, and why am I still searching for that “perfect” present. It’s my significant other . . . let’s just say that the best laid plans don’t always work out and now I am scrambling for Plan B.

I am always the one who is so prepared but when it comes to my husband, I have a guy who wants little and needs nothing. I have given him gifts from creative to practical to quite the surprise, and this year, I need to get busy. I’ve even tried the “if you could have anything”. . . His answer, “Just two bags of Grub X for the lawn”. Ummm, yes, I have some work to do.

I am the travel girl, the girl with creativity and vision. I am one to jump in the car, catch a plane and be off on an adventure. So why is this so hard? This got me thinking. First off, life always seems to be a bit chaotic and crazy around here with everyone on different schedules and times. Secondly, I really have a hard time buying a gift just for the sake of purchasing a gift. I will shop and shop (and shop) until I find the “it” gift. I know it’s kind of silly, but I want the gift to represent not just my recipient, but also me. I am sure I am probably more in love with some of the gifts that I give, but isn’t that where “it’s the thought that counts” came to mean? And thirdly, I want the gift to be looked at, remembered, and to bring a smile for more than just that moment. Yes, it seems like I have a lot invested in this gift searching, but I know that it will be well worth it.

So, after another day of uneventful shopping, I came home empty handed and wondering what to do? Wedding Wednesday ~ Sweet Treats

Choosing your wedding cake can be overwhelming and just plain confusing - from the shape, the size, color, decorations, and the flavor, there are so many options.

Your wedding cake will serve as one of your centerpieces for your wedding and trying to decide may feel like an unattainable task, but knowing your likes and dislikes ahead of time will help you in your decision, along with a few other tips in creating not only a beautiful, but also, a tasty treat for you and your guest.

Here are a few things to keep in mind:

Know your wedding colors

Look at the style of your wedding gown - fabric, beading and other embellishments

What are your flowers and colors?

When is your wedding (during what season)?

How much are you willing to spend on your cake? (the more detail, unique fresh flowers, and changes from the “traditional”, the more cost)

Think about your reception venue location for delivery

What size serving are you offering to your guest?

Do you want to keep the top of your cake for your first anniversary celebration?

What type of flavors do you want for your cake?

What type of frosting do you want?

Your cake will be based on the number of guest to cake tiers or layers. Most cakes are able to be made according to your desired number of servings with some modifications. Remember to takes take you color swatches with you to show examples of colors, beading and crystals. Bring along photos of wedding cakes that you like and other decorations for your wedding along with your choice of flowers.

Unique wedding cakes can be pieces range from artistry, conversation pieces, to reflect the style and personality of the couple. You may want to have a wedding cake that incorporates your heritage or ethnic background, or even a cake that reflects a family tradition or heirloom.

Flavors and Fillings
A traditional wedding cake is usually white with white butter cream frosting. Unique wedding cakes can be as simple as choosing new and different flavors and fillings. You may just want to create different flavors for the different tiers. For a Spring wedding, lemon or lemon poppy seed cake with a lemon mouse filling can be a light and wonderful alternative to white cake. For Summer weddings, whipped toppings and in season berries may be something different, as well as unique flavors like coconut and fillings of pineapple, mango or key lime. Fall may bring cake flavors of carrot, spice or nut with cream cheese, maple, orange, toffee or other fillings. Design and Frosting
There are many choices of frosting, shape, and design. You want your wedding cake to taste delicious, and you will want a special and beautiful presentation as well. Fondant frostings result in a hard, smooth finish, while butter cream frosting is more pliable and works well for lattice and textured finishes.

If you are to choose a unique wedding cake design, you may have fun with different flavors of cakes, colors of frosting, cakes with hand painted or airbrushed designs, a topsy-turvy cake, specific shaped cakes - such as a cornucopia for a Fall wedding, a Christmas tree tower for Winter or a cake that resembles flower pots for Spring or Summer weddings.

Embellishment and Presentation
The embellishment and presentation is also part of creating unique wedding cakes. Marzipan, gum paste, candy clay, and pastillage can all be used to create edible embellishments on your wedding cake. Iridescent powders, lace, basket weave, or latticework designs, blown sugar pearls or jewels, and unique cake texturing can all create individualized looks for your cake. You may want fresh of sugared fruits, fountain cake stands, candles, or surround your cake with miniature look-a-like cakes.

Wedding Cake Alternatives
For something different than a wedding cake, you may want to use an alternative for a sweet ending to your special day. You may consider a tiered presentation of cupcakes, donuts, frosted cookies, an ice-cream wedding cake, cheesecake or mini cheesecakes, individual miniature cakes, chocolate fondue or a chocolate fountain with fresh fruits, cream puffs, petite fours, custards, puddings, tiramisu, a buffet with miniature desserts, or even a whimsical presentation of funnel cakes.

You will choose a single tier to several tiers along with the shape of round, oval, square, hexagon or a mixture. Know ahead of time what type of wedding cake topper you want, and most importantly, sample your flavors. Also keep in mind of food allergies - not everyone can eat nuts or poppy seeds. You do want your cake to reflect your wedding but you also want your guest to enjoy it.

So, after all this talk about cake, it‘s sounding pretty good! I think I’d better get busy and bake myself one.
